450kg Pilsner malt (base for clean sweetness)
300kg Wheat malt (adds cloudiness & body)
50kg Munich malt (depth of malt character)

Spices & Additives
1.5kg Coriander seeds (crushed, 5min boil: citrusy spice)

Yeast
5kg Belgian Witbier yeast (for classic banana/clove esters)
Process Notes
Mash at 65-67°C for 60min. Boil 90min. Ferment at 18-20°C. Use 1000L fermentation tanks & steam-heated brewing equipment for optimal control.
